1.5 pounds of beef stew meat
1 chopped onion
1 green pepper chopped
1 jalapeno chopped
4 garlic cloves minced
2 tsp of salt
3 tablespoons of olive oil
1 (28 ounces) can of crushed tomatoes
1 can of Anastasia Island IPA
3 tablespoons of chili powder
1.5 tablespoons of cumin
1 tsp of sugar
2 tsp of dried oregano
2 tsp of black pepper
1/2 tsp of red pepper (or to your taste)
2 cups of beef broth
3 (15-ounce) cans of black beans rinsed and drained
Cook first 5 ingredients and 1/2 of the salt in hot oil over medium heat until beef browns. You can add a couple dashes of all seasonings to the meat while cooking to add to the flavor.
Stir in remaining salt, tomatoes, 1/2 beer, and next 6 ingredients and simmer for an hour.
Stir in remaining beer, broth, and beans and simmer for an additional hour.
